- 300ml Jug
- 12 oz. Cup
PREP
- Fill double measure 18g in portafilter (single is approx 10g)
- Push tamper straight down with light pressure, twist slightly and lift
- Wipe leftover coffee off rim
- If syrup is required add this to the cup before espresso
TIP: The freshly ground coffee should have the consistency of caster sugar
METHOD
- Start with the milk so it has 30sec to split.
- Froth all the way to 60° pulling jug down as milk expands
- With hand over the jug tap its base on the countertop
to remove bubbles and swirl just a little bit - Make coffee shot
- Pour milk from side of jug, not lip, first aiming for the center
as close to coffee as possible, then continuing in a circular motion out
toward the rim, empty whole jug - Wipe steaming wand with wet cloth
- Release steam from steaming wand for 2secs to eliminate residual water
TIP: Time permitting it’s best to use a regular size jug for 2 cappuccinos instead of a big jug
